- 1 cup 220 g powdered sugar
- 1 tsp of vanilla bean paste
- 3 coles australian egg
- 1 2 cup 75 g white flour
- 1 4 cup 35 g self raising flour
- 1 cup 125g almond meal
- 1 2 cup 140 g greek style yogurt
- 1 tablespoon liqueur amaretto optional
- 6 plums pitted cut in slices
- sugar ice to serve
- plum wedges extra to serve
- whipped cream to serve

- preheat the oven to 180c lightly grease a 20 cm base measurement round cake pan and line the base and sides with parchment paper use an electric mixer beat the butter sugar and vanilla in a bowl until light and fluffy add the eggs 1 at a time beating well after each addition
- stir in the flour combined almond meal yogurt and amaretto if using until just combined pour half of the mixture into the prepared pan top with half of the plum repeat with the rest of the mixture and of the plum
- bake covering with foil halfway through baking to avoid overbrowning for 1 hour 10 minutes or until a skewer inserted in centre of cake comes out clean set aside in the pan for 10 minutes to cool before transferring to a wire rack to cool completely sprinkle with icing sugar and garnish with the extra plum serve with whipped cream
