Japanese Beef And Soba Noodle Salad


The ultimate beef noodle salad - and the secret is all in the dressing. Tender rump, soba noodles and fresh vegetables, sprinkled with nutty sesame seeds.

  • 600g beef rump fat trimmed
  • 1 tablespoon miso paste
  • 1 tablespoon sunflower oil
  • 3 tablespoon mirin
  • 270g soba noodles
  • 1 bunch gai laan chinese broccoli 5cm lengths
  • 2 tablespoon toasted sesame seeds plus extra to sprinkle
  • 2 small carrots halved thinly sliced on the diagonal
  • 1 2 bunch small pink radish thinly sliced
  • 2 tablespoon tamari or soy sauce
  • 1 tablespoon maple syrup
  • pickled ginger to serve
  • edamame beans cooked podded to serve
  • nori strips to serve

  • place beef on a plate mix miso oil and 1 tablespoon mirin in a small bowl to a paste and spread all over beef
  • preheat a bbq or chargrill plate to medium heat cook beef for 3 minutes per side for medium rare rest for 5 10 minutes before slicing across the grain
  • bring a medium saucepan of water to the boil cook soba for 2 minutes add gai laan stems and cook for 30 seconds then add gai laan leaves and cook another 30 seconds drain and return to saucepan gently stir through sesame seeds carrot radish tamari maple syrup and 2 tablespoon mirin
  • serve noodles with pickled ginger edamame nori strips and top with sliced beef sprinkle with extra sesame seeds if desired
