Beef, Bean And Sweet Potato Chimichangas

The ingredient of Beef Bean And Sweet Potato Chimichangas

  • 2 1 2 tablespoons light extra virgin olive oil
  • 1 red onion finely chopped
  • 1 about 250g sweet potato peeled coarsely grated

  • 420g can kidney beans
  • 6 jumbo tortillas

  • 2 large truss tomatoes chopped
  • 2 green shallots thinly sliced
  • 1 2 fresh jalapeu00f1o chilli deseeded finely chopped
  • 1 3 cup fresh coriander leaves chopped
  • 1 teaspoon finely grated lime rind
  • 3 teaspoons fresh lime juice

The Instruction of beef bean and sweet potato chimichangas

  • preheat the oven to 210c 190c fan forced line a baking tray with baking paper
  • heat 1 tablespoon oil in a large frying pan over medium heat add onion cook stirring for 3 minutes add the sweet potato cook stirring for 2 minutes or until just softened add the cumin coriander paprika oregano chilli and garlic cook stirring for 1 minute or until aromatic
  • increase heat to high add the mince cook breaking up lumps with a wooden spoon for 5 minutes or until browned add the tomato bring to the boil reduce heat to medium cook covered stirring occasionally for 5 minutes add the beans and the can juices cook uncovered stirring occasionally for 5 minutes or until thickened season transfer to a bowl set aside to cool slightly
  • place one sixth of the beef mixture in the centre of a tortilla fold in sides then fold up bottom edge and roll over to enclose filling repeat with remaining tortillas and beef mixture place on prepared tray brush tortillas with remaining oil bake for 12 14 minutes or until golden brown
  • meanwhile for the salsa combine all ingredients in a bowl season
  • serve chimichangas with salsa guacamole and sour cream if using
