The ingredient of Rack Of Lamb

  • 4 racks of lamb 3 cutlets in each
  • 1 2 cup tomato sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons brown vinegar
  • 2 tablespoons bottled mint jelly
  • 1 2 cup water

The Instruction of rack of lamb

  • preheat oven to 200c 180c fan forced
  • put lamb in a baking dish and bake for 15 minutes
  • combine remaining ingredients in a saucepan and bring to the boil
  • remove from heat and pour over lamb
  • reduce heat to 180c 160 fan forced and bake a further 40 to 45 minutes or until meat is tender basting frequently with sauce
  • serve sauce separately
