- 600g 4 cups lighthouse bread pizza plain flour

- 2 teaspoon bicarbonate of soda
- 2 teaspoon baking powder
- 2 teaspoon sea salt
- 100g butter chilled finely chopped plus extra melted for brushing
- 2 teaspoon sesame seeds
- 2 teaspoon poppy seeds
- 1 teaspoon fennel seeds
- 300ml buttermilk
- 185ml 3 4 cup milk

- preheat oven to 200c 180c fan forced line a large baking tray with baking paper
- sift the flour into a large bowl stir in the sugar bicarb baking powder and 1 tsp salt add the butter and use your fingertips to rub into the flour mixture until mixture resembles fine crumbs make a well in the centre
- combine sesame seeds poppy seeds fennel seeds and remaining salt in a small bowl set aside whisk buttermilk and milk in a jug add the buttermilk mixture to the well stir until the mixture just comes together turn onto a floured surface and gently bring the dough together shape into a round then cut in half cut each semicircle into 8 wedges
- shape wedges of dough into rough balls dusting with extra flour to prevent sticking if necessary arrange balls in 2 concentric circles on prepared tray making sure they are just touching one another
- brush the dough with extra melted butter sprinkle with the seed mixture bake for 30 minutes or until golden and puffed cool slightly serve warm
