  • 1 4 cup 45g diced dried apricots
  • 1 cup 250ml skim milk
  • 2 eggs
  • 1 tablespoon caster sugar
  • 1 teaspoon vanilla essence
  • 1 tablespoon slivered almonds

  • preheat oven to 180u00b0c spread each slice of bread with the jam and cut into quarters press half of the bread jam side up into 4 x 1 2 cup 125ml ovenproof dishes or ramekins sprinkle with the apricots
  • whisk the milk eggs sugar and vanilla together in a jug pour half the mixture over the bread top with remaining bread and pour over remaining egg mixture
  • sprinkle with almonds place dishes on a baking tray and bake custards for 25 minutes or until golden custards will sink as they cool down
